When your car sits in the sun, the gas in the tank evaporates. Instead of venting to the outside air, it flows into a small canister of activated carbon. The carbon holds the fumes. When you start the car, the engine sucks those fumes out of the carbon and burns them. The carbon must do this catch-and-release cycle thousands of times over the life of the car.
